The nation's ice cream industry is one of the largest in the world, trailing closely behind the U.S. and tying Australia in second place. While vanilla continues to be the world's favorite flavor, the second most popular within New Zealand and Australia is the iconic "hokey pokey."

A combination of vanilla ice cream and bites of honeycomb candy, the sweet snack adds a crunchy twist to the more traditional dessert flavor. To make the honeycomb candy, you heat sugar, honey and golden syrup until the substance begins to caramelize, turning a light blonde color. Then, stir in baking soda and mix quickly. The candy will cool and harden, creating the same consistency as a piece of crunchy toffee.
